Pasta should be consumed on the day of delivery or the following day. Alternatively please freeze the pasta, which can be cooked directly from frozen.
We have been making fresh homemade pasta since we first opened our delicatessen in Soho in 1944.
Casarecce, which literally means homemade, are short twisted tubes of pasta originating from Sicily. Ideal for a variety of dishes because of their shape, they work especially well with our fresh basil pesto, Trapanese pesto made with sun dried tomatoes or even pistachio pesto. Try adding fried aubergine to our homemade tomato sauce finished with Parmigiano Reggiano or Pecorino. Also good with fish and seafood sauces.
500g, 3 – 4 portions (115g – 150g per person)
Bring a pan of generously salted water to the boil.
Once boiling, reduce to a medium simmer. Add Casarecce and cook for around 2 – 3 minutes until al dente
Add to pan of cooked sauce and mix together. Add a small amount of pasta water if necessary. Combine and season with salt and pepper to taste.
Plate up and finish with freshly grated Parmigiano Reggiano or other medium/hard Italian cheeses.
Store in fridge.
Consume within 3 days for London deliveries or on the day of delivery for nationwide deliveries.
Fresh pasta can be frozen for up to 3 months. Should be cooked directly from frozen. Do not defrost. Add an extra minute or so to normal cooking time.
